Kale, Pecan, and Feta Fall Salad
This terrific fall salad serves 6-8 and can be enjoyed with most any main dish. Feel free to add black olives, sweet baby tomatoes, and couscous (or shredded rotisserie chicken) for a heartier salad.

Ingredients:

  • 16 ozs of curly kale, tear into pieces, discarding stems
  • 2 Tbsp. extra virgin olive oil
  • Himalayan salt and freshly ground black pepper
  • 4 oz. crumbled feta cheese
  • 1 cup pecan halves, toasted
  • 5 radishes, thinly sliced
  • 2 stalks of celery, sliced
  • 1 avocado, sliced
  • 2 Tbsp. apple cider vinegar
  • 1 Tbsp. Dijon mustard
  • 4 slices turkey bacon, crisply cooked and crumbled

Directions:

  • Combine torn kale with 1 tablespoon of oil in a serving bowl and lightly season with salt. Massage kale leaves gently to soften (about 5 minutes). Sprinkle with feta, toasted pecans, sliced radishes, celery, and avocado.
  • Whisk together apple cider vinegar, remaining oil, and mustard. Cook bacon in a medium skillet over medium heat until crispy, 7-8 minutes. Allow to cool slightly, then chop on cutting board. Add bacon to dressing and whisk to combine. Season further with salt and pepper to taste. Add to salad and toss to combine. Serve immediately.

Chewy Triple Threat Chocolate Chip Cookies

3 brown bowls with 3 different types of chips for cookies: milk chocolate, white chocolate and peanut butter

Follow this recipe closely! By using melted butter, cornstarch, room temperature eggs, and chilled dough, you’ll enjoy truly chewy and delicious cookies. Makes 16-20 large cookies.

Ingredients:

  • 2 and 1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 and 1/2 teaspoons cornstarch
  • 1/2 teaspoon Himalayan salt
  • 3/4 cup unsalted butter, melted & allowed to cool
  • 3/4 cup packed brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg + 1 egg yolk, room temperature
  • 2 teaspoons pure vanilla extract
  • 1/2 cup milk chocolate chips
  • 1/2 cup white chocolate chips
  • 1/2 cup Reese’s peanut butter chips
  • 1 cup chopped macadamia nuts

Directions:

  • Within a large bowl, whisk together the flour, baking soda,cornstarch and salt, then set aside.
  • In a separate bowl whisk melted butter brown and white sugar until lump free. Whisk in whole egg and yolk, mixing until well combined, adding the vanilla last. Pour wet ingredients into dry, folding together with a spatula. This dough mixture with be thick, soft, and shiny.
  • Fold in chips and nuts, mixing as well as possible. Then be sure to cover the bowl and chill overnight in your frig.
  • The next day, preheat the oven to 325 degrees. Remove bowl from frig and scoop out cookie dough 2-3 tablespoons at a time, rolling into a fat ball (ensure the ball is taller than it is thick so it remains thick and chewy once it spreads out during cooking). Place the balls 3-4 inches apart on a cookie sheet lined with parchment paper.
  • Bake for 14-15 minutes, until edges are lightly browned. The centers will be soft, but will continue to set as they cool. Do not move to a cookie cooling rack for 10-15 minutes. If moved too soon, they will tear. Now, enjoy!
