Dear Clients, Partner Vendors, Family, and Friends,

From all of us at Ed Neir Construction, we would like to wish you a very blessed and joyful holiday season, and all the very BEST in the coming New Year! 

As the team and I ready ourselves for a few jobs that will launch early in 2026, we have been looking back on the many diverse projects you entrusted to us over the course of 2025. From kitchen and bath remodels to entire home renovations, cabanas, and ADUs, as well as some agriculture outbuildings, tenent improvements, and commercial ADA accessibility projects, we have enjoyed getting to know you and to helping you bring your construction dreams into reality! For these various opportunities, I would like to sincerely thank you for your business, and to say we are happy to tackle any new projects you may have planned – be they big or small – in the New Year.

Happily, on Christmas Eve, our son arrived in Vacaville to join us for dinner and a walk through Candy Cane and Lollipop Lanes to enjoy all the amazing decorations and lights. This is an overnight visit for our son so we may enjoy a delicious Christmas Day brunch prepared by my wife, followed by the opening of our gifts around our tree. If it’s raining, we will need to forgo our usual walk, and likely take in a good movie and then enjoy a delicious dinner afterwards. For us, the greatest of gifts is the love and easy laughter we get to share when we get together as a family! 

I hope you are surrounded by good friends and/or loving famiy this holiday season (as well as your beloved pets), and that the New Year brings you good health, happiness, and prosperity!

Stuffed Portobello Mushroom Appetizer

This appetizer makes 12 hearty bites, takes 30 minutes, and is terrific to share with guests or to bring to a holiday party. 

Ingredients:

  • 12 hearty portobello mushrooms, cleaned and hollowed out
  • 1 cup chopped baby spinach
  • 2 tablespoons plum tomatoes, chopped and seeded
  • 2 tablespoons roasted red peppers, chopped
  • 2 tablespoons black olives, chopped
  • 2 fresh garlic cloves, minced
  • 1 tablespoon fresh parsley, minced
  • 1 teaspoon dried or fresh oregano, minced
  • fresh ground black pepper, to taste
  • 1 teaspoon fresh lemon juice
  • 2 teaspoons olive oil
  • 1/2 cup crumbled feta
  • minced fresh parsley, for sprinkling

Instructions:

  • Pre-heat oven to 350 degrees.
  • Lightly grease a cookie sheet
  • Stir together all the filling ingredients.
  • Spoon the filling into the cleaned mushroom caps and place them on the prepared baking sheet.
  • Bake for 20-25 minutes until lightly golden.
  • Place on a serving platter and sprinkle with the minced parsley.

Buttery Garlic Salmon and Asparagus

Neir Family Recipe - Buttery Garlic Salmon and Asparagas on a dish with a slice of lemon

This main dish serves 4, takes just 20 minutes from start to finish, and is both quick and easy for no-stress holiday entertaining. 

Ingredients:

  • 1.5 pounds of Atlantic salmon (4 fillets)
  • 1.5 pounds trimmed asparagus (remove white portion)
  • ½ cup melted butter
  • 3 cloves garlic, minced
  • 1 tablespoon fresh Italian parsley, minced
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • 1 teaspoon Himalayan salt
  • ½ teaspoon ground black pepper
  • 4 slices fresh lemon

Instructions:

  • Pre-heat oven to 450 degrees. Spray a large rimmed baking sheet with ghee or any non-stick spray.
  • Place the salmon fillets in the center of the baking sheet, allowing some space between each.
  • Arrange the asparagus around the top and bottom of the baking sheet.
  • Mix together melted butter, garlic, parsley, paprika, and onion powder. Drizzle over the salmon and asparagus.
  • Sprinkle salmon and asparagus with the salt and pepper.
  • Lay 1 slice of lemon over each of the 4 salmon fillets.
  • Bake for 12-14 minutes or until the salmon flakes with fork and appears opaque throughout.
  • Serve immediately with extra lemon wedges and melted butter on the side.
